argentine cuisine/american classic

i still remember my first meal in Argentina at la familia Warton's house. there was orange soda to drink, wierd looking salads, lots of bread, and a rolled chicken with egg, carrots, and something else inside.
i quickly lost my appetite looking at it all, especially the chicken.
maybe what every missionary fears the most--having to eat all the food.
well, I'll tell ya, i never learned to like that chicken rolled up thing-a-ma-jigger, but I loveeeed the ensalada rusa (potatoes, carrots, peas with mayo), bread (oh my moly did i love their bread), arroz con leche (rice pudding), giso(stew), milanesa(breaded fried meat), pizza (pronounced "peek-za"), asado (infamous more-than-just-a-measley-bbq goodness), and a bunch more stuff.
so a few weeks ago I realized I have NEVER made anything from argentina!
(except alfajores when i first got home)
thus, a night of argentine cuisine was due
empañadas were the food of choice
so i emailed my loved ones in argie-land and got some seriously sweet recipies.
Mabel sent me her empanada and ensalada rusa reciepes from her Abuela Eusebia. Isn't that the coolest name? (A-ooh-seb-e-uh)
Results are shown below:
ok this is not really argentine, i never ate it there, but it's delicious. Tres Leche cake.
delicious. simple to make.
frying the empañadas. Much better fried than baked. But next time I'll buy empañada pre-cut circles instead of making the dough. mine was too thick.
we made a party out of it. the sisters and the graffs came over for the goodness! (Lynette even made the ensalada rusa! delish)

P had his Provo city league bball tourney recently. They lost, but P plays hard. That's something I love about him, he works hard until the end, even when things aren't looking promising. It shows what kind of person he is...never slowing down!
Check him out in action:
